Ilha Branca is hard cheese made with pasteurised milk from cows that graze freely in the green pastures of the Azores islands (Portugal) which are combed by the wind. It carries the salt of the calima due to its proximity to the sea. "It perfectly represents the island character". Matured for 15 months, it has a beautiful complexity of flavours. To be enjoyed with a round red such as a San Giovese.

Same type of production as S. Jorge but produced on the 2nd smallest Azorean Island named Graciosa the “gracious island” discovered like all archipelago, in the XV century, is about 10km diameter with 4000 inhabitants and 8000 cows.
