The Fromagerie Brun has been maturing cheese for more than 100 years and is located in the heart of the jura, in Poligny. 
Guardians of traditional refining methods, the Fromagerie Brun also has also taken part of modernity with robots allowing to turn, salt and scrub the Comté wheels. 

Favouring long maturation, the results translates in a much more developed aromatic richness and fruitiness.
