The Silver Wattle is a lactic cheese made in Castlemaine Victoria by Long Paddock and it is a very tasty imitation of the famous St Marcelin. A great pairing with the Gamay from Anvers Wines as Gamay is usually found in Beaujolais wines, where the St Marcelin is from. And as you know, what grows together, goes together!
