This sheep’s milk cheese comes from La Mancha in Central Spain. 

Rosemary leaves are pressed into the rind which is then matured in natural cellars. The rosemary and some blue grey mould develop on the rind giving the cheese a rustic and natural appearance.  

The texture is firm and compact with small holes spread unevenly throughout the cheese. The colour of the interior changes with age from white to ivory yellow. There is an herbaceous aroma and quite a spicy flavour.
