Made in the La Mancha region in central Spain since the time of the Romans, this cheese is now produced in large modern co-operatives. The flavour, however, remains unchanged as the sheep are still producing the same rich, aromatic milk as they continue to graze on the shrubs and grasses of La Mancha. These wheels come to us at twelve months of age and are cared for in our maturing room until sold. Each wheel is checked and turned each week during this time. The end result is a cheese of firm, dry texture, nutty and peppery flavours and a lovely long finish.
