Occelli al Barolo
A truly remarkable cheese, this exceptional wheel is crafted from a seasonal blend of goat’s and cow’s milk, then patiently aged for up to 18 months to develop depth, structure and complexity.
In its final stage of maturation, the wheels are immersed for two months in Langa grape pomace, enriched with Barolo wine—the skins, pulp and seeds gently infusing the cheese with subtle vinous notes and a deep sense of place.
The result is a decadent, beautifully balanced flavour: creamy and buttery on the palate, with a gentle sweetness and a refined sharpness, while whispers of Barolo emerge softly in the background. The interior is firm and pale, yet melts effortlessly in the mouth, leaving a long, elegant finish.
Behind this creation is Beppino Occelli, who has been crafting cheeses since 1976, guided by a profound love for his native Langhe and Alpine regions, and a deep respect for traditional techniques reimagined with quiet innovation.
