Hervé Mons Bleu d'Auvergne
The Auvergne is a beautiful mountainous region in southern central France which is popular for the Massif Central mountains. The Aubrac & Salers cows graze on the mountainous pastures and their milk is transformed into this cheese named after the region. Bleu d'Auvergne is of relatively recent origin but is one of the cheeses granted AOP Appellation d'Origine Protégée (Protected Designation of Origin) status. It has a natural rind encasing an ivory white interior. The drained cheeses are pierced to create an even spread of veins through which the blue grey moulds grow. The texture is firm yet creamy and the blue mould provides a piquant spiciness that is balanced by the saltiness of this cheese.
