A lactic-fermented goat's milk cheese, Florence is a celebration of subtlety and complexity, nurtured to perfection through a long fermentation period under gentle temperatures.
With a signature O shape creating a vast surface area, this is a cheese that rewards affinage.
This exclusive cheese owes its unique character to geotrichum, a distinct mould grown exclusively in our factory and used across our finest creations. With its delicate wrinkly rind, reminiscent of an intricate pattern, each handmade wheel of Florence is one of a kind, reflecting the beauty of batch variation that is a signature of handmade cheesemaking.
Florence’s paste offers a gentle acidity and nuanced flavours, with a luscious, fudge-like texture developing beneath the rind as it ripens. Its circular shape enhances the maturation process, allowing the geotrichum to permeate deeply, resulting in a balanced and harmonious profile.
Pair Florence with a glass of Champagne, aged Semillon, or Chardonnay to elevate its creamy, soft notes. Available only from October to April, when the goat’s milk boasts its ideal fat and protein content, Florence is ready for your seasonal indulgence.
