This traditional recipe from the Piemonte region of Italy combines the qualities of goat, sheep and cow’s milk into a harmonious balance of flavours. La Tur has a straw coloured interior with a dense, creamy blend of cow, goat and sheep milk. It has a wrinkled pale yellow rind which blooms with white grey moulds. It has a fresh, milky flavour with a pleasant citrus tang when young. With age it will develop an earthy and full flavour.
An ideal pairing would be a sparkling dry white wine which will balance the richness while matching the mild acidity.
