It is often said that the Basques are stubborn, proud of their country and their traditions. This is true for the handful of women and men who decided several years ago to create Fromagerie Agour in Hélette, a picturesque village in the heart of the dairy region in the Pyrénées. They use traditional shepherding and agricultural practices and are committed to quality. These gorgeous wheels are matured for a minimum of 60 days by which time they have developed a natural grey-orange rind. The interior is pale off-white with a soft texture and a velvety, buttery
mouthfeel. The combination of goat and sheep milk creates a harmonious
balance of an initial herbaceous and nutty flavour, followed by a
sweet, gentle finish.
