Typical of the Italian cheese-making tradition, Provolone Mandarone is made from cow's milk and has a semi-hard, stringy texture, ripened and with a natural acidity from fermentation.
Its characteristic shape is typical of its region of origin, Campania.

Produced according to an ancient tradition, the curd is worked by hand using traditional skills. It is lightly flaky and supple, thanks to its typical aroma and slightly spicy taste, thanks to the incorporation of tasty curds (lamb and kid).
