The Poitou-Charentes region in the west of France is known to be the cradle of French goat cheese production with 400 years of history. This small round disc has a white rind with a pale yellow-white interior. When young, the Crottin has a fudgy texture with mild hints of salt, yeast and acidity. It is common to see blooming white and blue moulds growing over the rind as it ages. This cheese dries out as it matures, becoming firmer and fuller in flavour making it excellent to grate or bake.

Fromagerie Poitou Chevre, Poitou-Charente France. It was in 1897 that farmers surrounding the Mothe Saint Héray came together to create the cooperative dairy la Mothe. During the twentieth century, the dairy specialised in cheese production, especially in goat cheese. In 1996, Poitou goat cheese, family business, took over the operation of the dairy, and is now dedicated to manufacturing goat cheeses such as Chabichou du Poitou and Ste Maure.
