A very well-made organic Australian blue, inspired by two favourites of the cheesemaker Yvan, the Fourme d'Ambert and Stilton. This cheese is a beautiful combination of both. 

The texture is dense and buttery near the rind, but chalky/crumblier in the middle. Like Stilton, the curd is milled, allowing relatively mild blueing in a dense but slightly crumbly paste.
