This is from France's most famous region for making goat's cheese - Poitou Charente. There is a beautiful white velvety rind encasing a slightly firm and chalky centre with cream right underneath the rind. The flavour is tangy and herbaceous with lovely citrus overtones. As this cheese ripens, it becomes softer and creamier underneath the rind, while the centre still remains slightly firm.
