A very well-made organic Australian blue, inspired by two favourite cheeses of the cheesemaker Yvan - Fourme d'Ambert and Stilton.

Bluestone is a beautiful combination of both.

The texture is dense and buttery near the rind, but chalky/crumblier in the middle. Like Stilton, the curd is milled, allowing relatively mild blueing in a dense but slightly crumbly paste.
