The Jaquin family are third generation cheese makers in Indre in the Loire Valley. They make a range of goat cheese from both raw and pasteurised milk.

This is a pasteurised version of St Maure de Touraine. The chèvre is hand ladled into a log shaped mould to drain. 

A coating of salty ash is added and the cheese is turned every day until the rind has covered the surface of the cheese.

This cheese has a robust balanced flavour with a soft texture.
