Raw Manchego and Almond Dip
A bright spread that can be simply enjoyed as a dip, spread on grilled bread or used as a condiment in sandwiches.
- 120g roasted red peppers
- 60g sun-dried tomatoes
- ¾ cup grated Manchego
- ½ cup roasted almonds
- ½ cup extra virgin olive oil
- 2 teaspoons minced fresh parsley or coriander
- 1 garlic clove
- Salt and pepper to taste
Add ingredients to a food processor and pulse until smooth. Add salt & pepper to taste.
