 Raw Manchego and Almond Dip

Raw Manchego and Almond Dip

A bright spread that can be simply enjoyed as a dip, spread on grilled bread or used as a condiment in sandwiches.  

  • 120g roasted red peppers 
  • 60g sun-dried tomatoes
  • ¾ cup grated Manchego
  • ½ cup roasted almonds
  • ½ cup extra virgin olive oil
  • 2 teaspoons minced fresh parsley or coriander
  • 1 garlic clove
  • Salt and pepper to taste

Add ingredients to a food processor and pulse until smooth. Add salt & pepper to taste.
