Raw Milk Manchego PDO is an exceptional sheep milk cheese from Castilla, a lush pastoral area in central Spain. The rich and varied natural vegetation produces high quality milk which is certainly evident in the final product.

Made with raw sheep milk and matured for around 6 months, the characteristics of this exceptional cheese are truly unique, and pasteurised cheeses simply do not compare.
The texture is firm while also creamy, with a distinct buttery and fruity flavour. The lingering finish is slightly nutty with a balance of caramel and peppery notes.
